Scrambled Eggs with Spinach and Goat Cheese




6 eggs

4 oz of goat cheese

2 cups of fresh baby spinach, washed and dried

3 tbsp. of sunflower seeds

2 tbsp. of vegetable oil

salt and pepper, to taste



Whisk two large eggs in a small bowl, season with salt and pepper and set aside.

Heat the vegetable oil in a medium nonstick skillet over medium heat.

Now add the spinach and cook, tossing about 1 minute until the spinach gets soft.

Next add the eggs and cook about 1 minute until just set.

Stir in your goat cheese and and cook for another minute until the cheese is slightly melted.

Sprinkle with the sunflower seeds and you are ready to serve! 🙂
