Vegan Cashew Dressing





1/3 cup of cashew nuts

1 1/2 tbsp. of freshly squeezed lemon juice

1 1/2 tsp. of apple cider vinegar

2 tbsp. of almond milk (or any other plant based milk)

5 tbsp. of water

1 big clove of garlic, minced

salt & pepper, to taste




  1. Soak the cashew nuts for 3 hours or overnight.
  2. In a high powered blender, combine all the ingredients and blend until smooth. Refrigerate for 30 minutes before serving. It keeps up to 5 days in the fridge.


You can use the Dressing for sauces or salads or as dip for vegetable sticks, nachos, potato wedges or french fries!
