Fresh Summer Rolls with Peanut Dipping Sauce

 

Summer Rolls with super yummy and healthy Peanut Dip

 

Ingredients: (for 4 rolls)

 

Summer Rolls:

Chopped veggies for summer roll, sushi, salads, mandoline

4 sheets of 22cm/8.5″ round rice paper

75 gr. of sushi rice

75 gr. thin wholegrain rice noodles

2 carrots

1/2 head of romaine lettuce

1 bell pepper

1/2 cucumber

1/2 avocado

1 handful of parsley

fresh mint

fresh chives

 

Peanut Dipping Sauce:

2 Tbsp of crunchy peanut butter (no added sugar)

2 tsp of soy sauce

2 tsp of rice vinegar

1/2 tsp of maple syrup

1/2 tsp of sesame oil

4 tbsp of hot water

pinch of chili

Preparation:

1. Prepare rice noodles and cook rice according to the package instructions . Meanwhile julienne all your vegetables and slice up the avocado.

 

2. Fill a large bowl with warm water. Submerge the rice paper into the water for a bit and place the rice paper on a board or the counter. The rice paper should be elastic and soft now. (Repeat this step after you finished the first roll)

 

3. Now place some of each of the fillings in the centre of the rice paper (like on the photo <=) Bring the two ends of the rice paper over the filling, then roll up the sides to create a tight parcel. Repeat with remaining rice paper sheets. Done!!

 

4. You can also fill your rolls with glass noodles, mango, tuna, shrimp, salmon, chicken or other vegetables. Be creative 😀

 

Peanut Dipping Sauce:

In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup and sesame oil. Add hot water until you get a creamy consistency. Now you can add chili or sesame seeds.
